The weather is holding so far! Dare I say we are officially into spring?! I really think the key to successfully completing your Whole30 is planning ahead. Even though it is boring to eat the same thing every day, it fills my belly and tastes good. After I eat each meal I am satiated and content.
On a side note, my dog (my other child) seems to be getting tons of sleep and I’m a little jealous. I love that little girl. We got her from a local animal rescue group. Her Mom was found pregnant in a high kill shelter. They got her out in the nick of time and she had seven cute little pups in the safety of her foster home. Unfortunately, a few of them got Parvo including our sweet girl. She pulled through and around 14 weeks old, we took her home to be part of our family. We had another dog at the time, Jager (I’ll have to write a whole post about him because he was the most special dog and when he passed away a little chunk of my heart died with him). But Jager showed her the ropes and they were BFF’s. I think because she was so sickly in her first few weeks of life and got pricked and prodded at the vets, she is weary of EVERYTHING.
When my son came along, she fell in love with him at first sight. It was a little alarming because she would actually growl and all the hairs on her back would ruffle if anyone outside the family got too close to him. It’s gotten better over time. They now have a symbiotic relationship, he provides her with all of his food he doesn’t want while she provides security services.
I love me some Sweet Green! They get all of their ingredients from local farmers and get organic whenever possible. I got a Chicken Kale Caesar salad with no cheese or croutons and I added in sweet potatoes. I also had to sub out the dressing. I think the Pesto Vinaigrette is the closest to being compliant, however I just used the Tessemae Lemon Garlic I had at home. This salad is HUGE!!! If you didn’t notice, it is in a giant mixing bowl. AND also if you didn’t notice I ate every last morsel. I ate a little late today since I had a lot of work to get done. I was ravenous.
OK, so this doesn’t look too appetizing… but I promise you this is the best grilled chicken I’ve EVER had!!!!!! Holy goodness it was good. I brined it the entire day with some seeds and herbs and then I put pepper, garlic and onion power in some ghee and rubbed it on the chicken. My husband cooked it since I manage to dry it out every time. We cooked up about 2.5 lbs of chicken to eat for the next few days.
Today was warm, but it looked like it was about to rain. I decided to risk it and take the jogging stroller out for a run. Our neighborhood has a lot of hills. Pushing that stroller up all those hills was ROUGH!
