Whole30 – Day 8

It’s a miracle!!!!!  My son slept through the entire night.  I woke up this morning all confused and then jumped out of bed to check on him.  I’m scared to wish for this two nights in a row, but I’m still going to cross my fingers that we’ve turned some sort of corner.  Whole30 is still going strong.  I honestly think if I wasn’t doing Whole30 I wouldn’t have had an ounce of energy to get me through the past few days.

Breakfast:

I used to make this breakfast all the time.  I would just cut up a bunch of sweet potatoes on the weekend into cubes and then dump them into a skillet each morning with some coconut oil and let them cook up while I did some of my morning chores.  Then when they were nice a soft yet crispy on the outside I’d plop and egg on top and let it cook a few more minutes.  I used to add onion to this, but I was out of onion, still delicious!

Lunch:

Twice baked sweet potatoes – rebel style.

Dinner:

My dinner looks pretty pathetic.  I was so exhausted after my workout.  I felt like  zombie walking up the stairs and plopped my many bags down and just fell into the couch.  I peeled myself off the couch and dumped whatever I could find in the fridge on a plate and heated it up.  I was asleep not long after.

Snack:

I probably shouldn’t be eating these… they are so freaking good.  But I like that they have carbs and protein and seem to be a perfect after-workout snack.
